渾源涼粉

涼粉是老百姓夏季喜歡吃的食品之一，山西渾源人愛吃涼粉則不分春夏秋冬，一年四季街頭上都有涼粉攤。

山西渾源地處北嶽恒山腳下，吃過渾源涼粉的人都忘不了它那獨特的味道。渾源的涼粉攤，除了碗坨狀的涼粉外，還有十幾個小盆，裏面放著各種各樣的調味料，主要有醋、蒜水、蔥花、黃瓜、香菜，最特別的則是渾源涼粉特有的蓮花豆（酥炸蠶豆）、豆腐乾和辣椒油。蓮花豆香酥可口，豆腐乾嚼得過癮，辣椒油則口感香辣。

渾源涼粉以馬鈴薯澱粉為原料，加入適量的明礬，攪成糊狀，在火上滾熟，放涼了倒出即成，所以又名粉砣。渾源涼粉細嫩而滑溜，看起來幾乎透明，而且像布丁一樣軟滑順口，用筷子根本夾不起來。當地人吃涼粉，都是低下頭直接用筷子扒到嘴裏，到最後乾脆仰頭將湯料都灌到嘴裏，所以當地人說喝涼粉而不是吃涼粉。

渾源涼粉清泠，滑溜，細膩而口味勁道，配上有炸得酥脆的蓮花豆、很有嚼勁的豆腐乾、色香味俱佳的辣椒油等佐料，讓人不由自主的再來一碗。

渾源的涼粉店，以縣城石橋街的「小媳婦」涼粉店最為有名。不僅涼粉好吃，辣椒油更是一絕。
